There are two known mechanisms of action for these interesting nutrients. Research in the past decade has elucidated a "hormone-like" mechanism for fatty acid signaling that is very similar (in kind) to that for vitamin A. In this mode of action, fatty acids either undergo metabolism to more active forms or they directly interact with specific nuclear receptors. In proportion to their concentration within target cells, this results in regulation of fatty acid-responsive gene expression. The primary targets of fatty acids signaling via this mechanism are the liver and intestine. In general, the genes that are regulated by fatty acids function in metabolic pathways related to energy production. The other mechanism by which essential fatty acids function involves a general structural role in maintaining normal membrane fluidity. Omega 3 fatty acids may influence several factors that modify the risk or severity of CHD, including decreasing platelet aggregation, reducing levels of lipids in the blood, and reducing blood pressure. In addition, n-3 fatty acids may influence the progress of established heart disease by modifying the risk of cardiac arrhythmias (irregular heart rhythms) Epidemiological studies generally support the concept that people who eat fish regularly are less likely to die of CHD than those who rarely or never eat it. In general, these studies have shown an association between consumption of two to three fish meals per week (20-50 gm of fish per day) and lower risk of cardiovascular diseases. In one study of 1200 subjects, the beneficial effects were greatest for those subjects in the highest quintile of n-3 fatty acid intake (664 mg/day).
