Why Should We Eat Carrots ? Carrots are a great source of beta-carotene, which helps the body fight sickness and disease. They also are a good source of fiber, vitamin B6 and potassium, all of which aid in a variety of health needs from metabolism to energy and cognitive performance. Carrots are a source of vitamin C and several essential minerals, like calcium and magnesium, which help fuel the body and support normal growth.

How To Select, Store and Serve Carrots? Look for long, thick, deep- orange carrots. Make sure they have no bumps or cracks. Avoid carrots that are wrinkled or soft. If you buy carrots with the green tops still on, break off the tops and rinse the carrots. Place in a plastic bag and store in the refrigerator. Carrots are best stored between  F in the refrigerator vegetable drawer. This helps to keep them tasty and crunchy. Do not store with fruits. Fruits give off a natural gas that can make vegetables go bad.
